G lutinous rice is a very common food among Zhuang people. They have various ways to cook it. One of the ways is, “Fried Sticky
Rice Sticks,” which they call as cuì tiáo (脆条), a crunchy and sweet snack.

I am so thankful that I had the chance to learn how to make this delicious snack from my local friend. It was during Chinese New Year, when my friend invited me to her village to celebrate New Years with her family. Her mum taught me to make this snack on the first day of the New Year (初一).

Frying the sticky rice snacks until they’re crunchy golden brown.

First, we used the sticky rice flour and some cold water to make it into a big round ball of dough. We prepared a pot with water, and boiled the water. When the water was boiling, we put the rice ball into it. We waited till the rice dough ball floated, then took it out and put it in a big bowl. After that, we put some eggs and sugar into the bowl, mixed with the cooked rice ball. Later, we put in more rice flour. We kneaded it into some dough. Then we used a knife to cut the dough into few pieces. We rolled the small pieces of dough, into long flat pieces, and cut them into small oblong strips.

The last thing that needs to be done is to fry them in hot boiling oil. When the sticks turn to a golden yellow color, they are ready to serve. I like to eat sweet stuff, so this snack has become my new favorite food.

When I have all of the ingredients I need, I will get started, and make this snack for my family and friends to try.
